Salicornia, dialect term “savzòdd”, is a spontaneous fleshy and brackish plant of the humid areas of our Gargano coast.
This "sea asparagus" is prepared in oil according to an ancient recipe.
The roots and the woodier parts of the plant are cut, washed delicately and boiled for a few minutes in water and vinegar. After cooling, the fleshy part of the branches is removed from the hard core, then placed in glass jars and covered with extra virgin olive oil.
